You don’t peel your apples? You remind me of the 2-3 dozen muffins I make every Sunday. I end up, giving them all away to my neighbors and friends, and rarely even have an opportunity to eat one.

There are very few apples that I peel...maybe Granny Smith and Cosmic Crisp as the skins are a bit thick. There is tannin in the skin that adds to the flavor and pectin that helps with thickening.

Be sure and get the original. The Veg-O-Matic 2 isn't strong enough. I found several of those on sale at a hardware store and broke on the first apple! I picked my first one up at a yard sale for $2. Then bought them on Ebay for $9. I have no idea what they are selling for now.

I will listen to the next pie I bake. I know the feel, the scent, the taste, but I've never listened to my pies.

Love this video Kate and oh my goodness you are gluten free as I must be! Do you ever bake a pie using gluten free flour? I would never love your thoughts on what flour would be best to use.

I do and use Bob's Red Mill One to One GF All Purpose Flour or King Arthur Measure for Measure GF Flour.
