There’s death (just get the damn shot, ok) and taxes, and then there’s the small stuff. My list pales when compared to one big thing—our survival on our planet. That’s it. That’s what I’m sweating about. For those who have been to my workshops and camps and recall me saying plastic wrap is my guilty pleasure, please know that as of two days ago I have ceased using it, and am successfully learning new techniques for prepping and rolling gluten-free doughs with wax paper and roul’pats, and without. Inevitably there will be questions.
But, can I freeze it?
The Piechiatrist: I don’t recall my grandmother freezing dough ever. Her pies were made the day they were to be served—nor was there any worry about storing leftover slices as there simply were none left so eat more pie, take a nice stroll, and think good thoughts.
Some may consider Pie the small stuff, not worthy of sweating over. I feel that it it may be one thing to help manage some of our collective fear and stress.
