When packing to move, some dear friends offer me an extra Instant Pot (IP) along with a quick tutorial and after a few experiments on my own I become a convert. Where has this been all my life? No, this won’t ever replace my love of slow simmering soup on top of my woodstove. That’s pretty sacrosanct for me. But, there are times when I need to make a quick meal and IP definitely does that. If you have and use one you know what I mean. This summer I even place a table outside on the back deck with two IPs going at once!

Put some in a bowl and add spoonfuls of plain yogurt and rhubarb chutney
Fill an omelette with a few tablespoons
Warm a half cup to top a green salad with a drizzle of good balsamic vinegar
Fill corn tortillas and heat them like a quesadilla
They’re good with leftover mashed potatoes, too.
